Fresh cucumber cooler is best rejuvenating tonic water. My version of drink is simple, quick yet delicious. This cooler is superb hydrating drink that is rich in vitamins and minerals. I have given this name “Cucumber Cooler” not because it is chilled or loaded with ice but the recipe includes cooling ingredients like cucumber, mint, coriander and cumin. They are perfect elements to beat summer heat naturally. I never use ice for any of my drink/smoothie/cooler recipes.
Cucumber cooler is perfect for a summer party, also when entertaining a big group. This summer juice can be also served to your family and loved ones on weekly bases to keep them hydrated during hot weather.
I do not prefer to strain my drink and waste the most important nutrient. Cucumber drink is good to cleanse and detox your body. It has amazing benefits for your skin, hair, stomach and overall health. Here are the Health facts: Cucumber is packed with nutrients and full of water. Cucumber is beneficial to ease heartburn, stomach acidity or ulcers, also helps to dissolve kidney & bladder stones, excellent for healthy skin, good laxative or diuretic. Whereas mint has excellent anti-inflammatory and antibacterial properties that soothe the swelling, helps digestion and relieves mild flu and cold.
Ingredients:
- 1 large or 2 medium size- Cucumber, diced
- ¼ cup – Fresh mint leaves, washed
- ¼ cup – Fresh coriander leaves along with steam, washed
- 1 – Lime, freshly squeezed juice
- 1 teaspoon – Cumin seed powder (Jeera powder)
- Pink Himalayan Salt as per taste
- Agave nectar or Jaggery, (I have not added)
- 2 glasses – Cool distilled water
Method
Step 1
In a Vitamix or any blender, add water, cucumber, mint, coriander, lime juice and salt. Blend it until everything is finely grinded and mixed.
Step 2
Now is the time to taste and adjust the salt and sweetness level. DO NOT strain the juice.
Step 3
Serve it fresh with a nice garnish of cumin seed powder and a sprig of fresh mint.
