Poha is a very popular breakfast in India. It is a quick, easy, tasty and healthy dish to make.

Ingredients

  • 2 cup – thick poha (Flattened rice)
  • 1 large – Potato (aloo), washed and cubed
  • 1 small – Onion (kanda), finely chopped
  • 1 small – Carrot (gajar), washed and cubed
  • 1 small – Green chili, finely chopped
  • 8-10 – Curry leaves (kadi Patta)
  • 1 teaspoon – Mustard seeds (Rai)
  • 1 teaspoon – Sesame seeds (Til)
  • 1-2 tablespoon – Unsalted roasted peanuts (moongphali)
  • ½ teaspoon – Turmeric powder (Haldi)
  • 1 teaspoon – Sugar, optional
  • 3 tablespoon – Coriander leaves, washed and finely chopped (Cilantro leaves)
  • 1 teaspoon – raisins, optional
  • 2 tablespoon – Peanut oil (any cooking oil)
  • 1 teaspoon – Lemon juice or as required
  • A few lemon wedges
  • Salt to taste as required
  • 2 tablespoon – Spicy Besan Sev (Fried chickpea noodles) , optional

Poha

Method

Step 1

Put poha in a strainer and wash it with clean running water for 2 minutes. Keep aside to drain.

Step 2

Sprinkle turmeric powder, sugar and salt in the poha. Mix it gently.

Step 3

Heat up a pan and dry roast peanuts till they become crunchy. Keep aside for later use.

Step 4

Heat oil in a pan, add mustard seeds and let it splutter and crackle.

Step 5

Then add sesame seeds, green chillies and curry leaves. Sauté this for 30 seconds.

Step 6

Now add onion and sauté till they become soft and translucent.

Step 7

Add potatoes, carrots and little salt, cover the pan with a lid and cook till it is fork tender (May take 5 minutes). Stir it halfway.

Step 8

Add the poha and stir it gently to mix all the spices. Cover it again for a minute. And stir it again.

Step 9

Add roasted peanuts and coriander leaves and mix everything well. Sprinkle lemon as required.

Step 10

Serve this poha hot with a lemon wedge and sev. Garnish it with some more coriander leaves and peanuts. Enjoy!



Notes

  • Adding sugar is optional, you can skip it completely.
  • Add 2 tablespoon of warm milk while re-heating for a moist fresh poha.
  • Do not wash too much or else it breaks and get mushy. Wash till poha become soft but remain whole and separate.
