This is a bowl of goodness loaded with fresh veggies and full of flavors. It can be intimidating to make this veggie burrito bowl at home but trust me it is easy, need a little preparation but it is all worth it!  This burrito bowl tastes like authentic Mexican restaurants. Note: Burrito Bowl is made with different layers but can be customized according to your preference. Here are the layers to make a perfectly tasty Chipotle Bowl. You can view layering photos below.


Layer 1: Coriander Rice
Layer 2: Spiced Black Beans
Layer 3: Grilled Veggies, Corns, tomatoes & Jalapeno
Layer 4: Chunky Medium Salsa and Smooth Spicy Salsa
Layer 5: Sour Cream & Cheese
Layer 6: Lettuce and Avocado / Guacamole

Ingredients

    • ¼ cup – Mix Bell Peppers, sliced
    • ¼ cup – Mushrooms, sliced
    • ¼ cup – Zucchini, sliced
    • ¼ cup – Onion, Sliced
    • ¼ cup – Corn Kernels, washed & boiled
    • 2 – Ripe Avocado, Sliced
    • 2 TBSP – Tomatoes, Finely Diced
    • 1 cup – Lettuce, Washed and chopped
    • 1 TBSP – Coriander Leaves, washed & finely chopped
    • 1 cup – Rice, rinsed, washed & soaked for an hour
    • ½ cup – Black Beans, Soaked overnight & rinsed
    • 2 cloves – Fresh Garlic, minced

    • 1 cup – Cheddar Cheese, grated
    • ¼ cup – Low Fat Vegan Sour Cream
    • ½ TBSP – Cumin Powder
    • ½ TSP – Smoked Cayenne Pepper Powder / Chipotle
    • 1 TBSP – Taco / Mexican Seasoning Powder
    • Hot Salsa/ Sauce (Optional)
    • 1 – Jalapeno, finely chopped (Optional)
    • 1 TSP –Olive Oil
    • Salt & Black Pepper to taste

Method

Step 1

Layer 1 Coriander Rice: Boil 2 cups of water in a pot, add salt and soaked rice. Cover the lid and let rice cook on low-medium flame for about 10 mins stirring in between. Check the doneness of the rice by pressing rice between the fingers, if it is completely soft it is ready. Now add freshly chopped coriander and mix well. Take a big burrito bowl and layer rice uniformly.

Step 2

Layer 2 Spiced Black Beans: Pressure cook black beans which are soaked overnight for 4 whistles or you can use electric instant pot. Once black beans are cooked, heat oil in a pan and add sauté garlic & jalapeno till fragrant. Now add cooked black beans, salt, Mexican seasoning, black pepper, cumin powder and chipotle chilli powder. Mix well and let it simmer for about 5 mins. The spiced black bean is ready for layering

Step 3

Layer 3 Grilled Veggies: Grill vegetables with a drizzle of oil on high flame and let it chard on both the sides which will take around 5-8 mins. Turn of the flame and then add salt to grilled vegetables, corns, raw tomatoes and raw jalapenos. Adding salt later keeps vegetables crisp, preventing veggies from becoming lumpy & watery. Layer this over black beans.

Step 4

Step 5

Layer 5 Sour Cream & Cheese: Add store-bought low fat sour cream and shredded cheese over the salsa

Step 6

Layer 6: Lettuce and Avocado / Guacamole: finally layer it with fresh lettuce leaves and sliced avocado

Step 7

Serve it immediately after layering. It tastes amazing with spicy salsa and nacho chips on side. Enjoy!

Notes

  • Vegan: Use vegan cheese/cream
  • Salad Bowl: You can make it a salad bowl by placing lettuce leaves at the bottom and skip the rice.
  • Spice: You can spice it up by adding more Jalapeno/Cayenne or Mex Seasoning
